Smoking again! (on the barbecue!) by calibrax

Beef brisket and pork ribs, hot smoking using indirect heat from charcoal and hickory wood... over 5 hours cooking so far, another 1 or 2 hours with the lid on should finish them off nicely. Can't stop my mouth watering!

I haven't even put any BBQ sauce on them yet! that gets brushed on for the final 30 mins or so.

I laid the meat flat and brushed on barbecue sauce for the last 30 mins cooking, and they came out like this...

The ribs were juicy and very tasty...

And the brisket is pure heaven... so moist and tender, with a lovely crust...
