have you tried unplugging the MAF (Mass Air Flow Sensor) sensor and driving at low speeds, if it stops the kangerooing then you know it's the MAF sensor, it maybe dropping out at low speeds but once on the motorway it will be using and pulling plenty of fuel also air flow would be stable at high speeds, so try that first.
Next after that do you have the under bonnet fuel pump, is it flowing freely without any spluttering or gurgling, you can check this by unplugging the fuel hose from the low pressure fuel pump, which is the one that the fuel filter is attached to, put the end into a 2 liter bottle or jug gat someone to turn the ignition to II not starting the car and see how the flow of fuel is, make sure they turn it off quick because a good pump will flow smooth and quickly, when was the fuel filter last changed they need changing every two years.
What state is your EGR (Exhaust Gas Recirculation Valve) in is it clogged up, if so it could be sticking slightly open, at high speeds it introduces too much exhaust gas at low speeds. This chokes the engine of clean air, causing it to judder and misfire, hitting the motorway speeds, the ECU (Engine Control Unit) closes the EGR valve completely, which is why the fault disappears at high speeds, also check the vacuum hose going to the EGR solenoid from the EGR they can chaff.
Try those and come back to us.
